Shakeology Pancakes

In our house, my son or husband are always wanting pancakes or waffles.  Sure we buy the store bought ones occasionally, but to save money and ensure we use the best ingredients, I am always on a mission to find new recipes we can try out.

A good friend of mine shared her version of Shakeology pancakes and I knew they would be a hit in our home.  The best part —> they are SO simple to make.

Before I go any further I should mention that I am NOT the pancake maker in the house.  I am not sure why, but no matter what I do my pancakes always come out broken, burnt or soggy.  For that reason, I leave that part up to my husband who can make a mean pancake!!

We have tried 2 different variations on these so far (see below) and I will say not only did the Shakeology ones taste a bit better, my husband said that making them was easier.  The regular protein powder made them a little thick and hard to judge when they were done.  Regardless both contain safe (chemical free) ingredients and were delicious.  You can choose which you prefer.

Although I do not cook them, I help in any way I can – taste testing, getting ingredients ready and watching the pro, my husband, go to work.  Basic ingredients, quick preparation and room to customize as you like.  Oh and NO flour used at all.

Ingredients that you will need (this makes 1 to 2 pancakes depending on how big you make them):

  • 1/2 banana
  • 1/4 cup oats (I am gluten free so my husband uses a different brand for mine)
  • 2 tbsp. (adjust as needed) unsweetened almond or coconut milk (we made ours with from coconut milk)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 egg
  • 1 scoop of Chocolate Shakeology (or another flavor if you want to be daring) – as mentioned above you can use different powders just be sure to check ingredients – these will be less dense in nutrition compared to Shakeology
  • Your own toppings – strawberries, bananas, blueberries, chocolate chips, syrup, coconut nectar, etc

I am great at prepping and getting everything mixed, but the cooking part is where I crumble.  I had to take a picture of the pancake in process to show how much better my husband is than me at this.  :)

We do our best at home to ensure the ingredients are safe that we use for our meals.  We don’t believe in restricting what you eat, but finding how to eat what you love.  By being aware of what is in our food we can have our favorites and still feel good about it.
