Portobello Mushrooms

So let me start off by saying that this girl right here would never in a million years think I would be eating mushrooms much less these big ole things.  Amazing what stepping out of your comfort zone can do when you are looking for healthy, yummy alternatives.  Now anytime I see nice looking caps at the store I always know what one dinner will be for that week.

There are many ways to make these and I encourage you to get creative and find some new ways to combine the ingredients.  Like a mini pizza (without the carbs) you can pretty much put a wide variety of items in/on these.  Below are the 2 options we tend to make in our home:

I use left over “stuffing” from our peppers for these.

* Oven 350

* Bake mushrooms alone for 5 minutes (I spread a little EVOO on each one)

* Put stuffing on and cook for 8 minutes

* Top with cheese and cook for 5 minutesport mush

* Put ground turkey and marinara sauce on and cook for 8 minutes

* Top with cheese and cook for 5 minutes
