Crockpot Chicken Taco Chili

The cooler weather is approaching and in our house we LOVE to use the crockpot whenever we get a chance.  This meal is one that we make very often (sometimes once a week) and is honestly great no matter what season or temp it is outside.  If you are looking for a simple, delicious meal that not only tastes amazing, but requires hardly any work, then look no further.  It goes a long way, my son absolutely loves it and if we are not careful my husband and I can devour a few bowls without even realizing it.  We even make this stove top sometimes.  I hope you LOVE it as much as we do!  :)

Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g  • Protein: 16.9 g

Ingredients: 

  • 1 onion, chopped (we use onion powder)
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies (we use chunky marinara sauce)
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 24 oz (3-4) boneless skinless chicken breasts (you can do without chicken as well)
  • chili peppers, chopped (optional – we omit these)
  • 1/4 cup chopped fresh cilantro (we leave out)

Directions: 

Combine beans, onions, chili peppers, corn, tomato sauce, cumin, chili powder and garlic powder in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream/greek yogurt as replacement (extra points).

      On page 71 in the Fix book you can find the breakdown in the restaurant guide. Measure in green container and then mark off 1 red, 1 yellow.

  1. Well, the verdict is in–we want to eat the whole pot right now!! Delicious. I’ll need to spice it up a bit for my hubby, though, he likes hot!

    • Haha Awesome! That sounds like my husband too! He loves spice and hot sauce is a daily staple. SO glad you enjoyed it!
